Overwrite instrument length and target guide distance on guide creation

Added feature to overwrite guide length and/or target guide distance when creating a new guide object.

Added a few lines in documentation to explain.

Overwrite of sample area, divergence and wavelength would not make sense in the same way as it would be a different project.
